Mortar has to be softer than the brick around it. Modern high-cement mortar on a hundred-year-old soft brick is harder than the brick, so the brick face spalls off instead of the mortar wearing — and the repair destroys the wall it was meant to save.
Everything above the roofline takes the weather from every side with no building behind it to keep it warm. That is why chimneys fail there first and why a rebuild usually stops at the roofline.
Freeze-thaw is the mechanism here. Water gets into an open joint, freezes overnight, expands, and takes a little more of the joint each time. A December of wet weather followed by a cold snap does years of damage in a fortnight.
We match brick for size, color and texture. A rebuilt stack in obviously modern brick is a permanent advertisement that something went wrong.

Repointing is grinding and refilling the joints; a rebuild takes the chimney down to sound brick and lays it back up with a new crown. The section above the roof takes the weather and it is usually the only part that needs rebuilding.
Can chimney brick be matched?
Yes, and it is part of the job — color, size and texture are matched from salvage or a current line, and the mortar color is matched too, so the repair does not read as a patch. On an old chimney a soft lime mortar is used, because modern hard mortar makes old brick spall.
