A fireplace that smokes into the room is a draught problem, and draught problems have causes: a flue too large for the appliance, a blocked cap, negative pressure from a modern airtight house, or an opening too big for the flue serving it. Each has a different fix, and none of them is "burn better wood".
Modern houses are the common culprit and the least expected one. A tight, well-sealed house running a bathroom fan and a kitchen extractor can pull the chimney backwards. Sometimes the answer is a make-up air supply rather than anything wrong with the chimney at all.
Gas appliances still need annual service. They make no soot, so people assume there is nothing to do — meanwhile the thermocouple degrades, the ceramic cracks, and the flue can be blocked by a bird without anyone noticing until the CO alarm goes.
We test draught with the appliance actually running, with the house in its normal state. A cold test on a still day tells you very little.
